My daughter made these & changed it up for me, this was the resulting recipe:
1 Large Chopped Avocado
1/2 Melted Cup Coconut Oil
2 Cups of GF Flour (Dove)
1 1/2 Cups of Coconut Sugar or a big splash of Maple Syrup
1 1/2 Cups of Coconut Milk (I like KOKO Milk)
1 Cup Cocoa Powder ( we used Green & Blacks Organic)
2 Teaspoons of Baking Powder
1 Pinch Salt
1 Preheat Oven 175c. Use Coconut Oil to grease a baking tray about 10” x12”
2 Mash Avocado with a fork or in a blender until smooth, add Coconut Oil and whisk together.
3 Whisk GF Flour, Coconut Milk, Coconut Sugar (or Maple Syrup) Cocoa Powder Baking Soda & salt into the avocado mix until evenly blended.
4 Place mix into baking Tray and Bake in the preheated oven for roughly 30 minutes. Check them towards the end and see how you like them, slightly firm to touch in centre of Brownie.
5. I have not tried this yet but I learned some people are mashing an avocado with good cocoa powder and using it as a frosting once Brownie is cool.

These Brownies have some good nutrients but they are still a treat due to the coconut fat, that’s my next wish, vegan, gf, fatless, nutless Brownies!
